Availability:In StockThis wine is the offspring of Cinsault and Syrah’s delectable marriage. It is a young, active and dry wine bursting with ripe, fruity red berry aromas and flavors. Les Cabires – Rosé is well balanced, making for a fresh and crisp drink. The vines are planted on terraces; and consequently the grapes are handpicked during the harvest season, which is softer on the vines and helps with the quality control, such as dismissing under ripe or rotten grapes.
The sorted grapes are quickly de-stemmed and crushed. With the skin contact, the mixture is partially fermented before being pressed in order to separate the juice from the skins, seeds, and solids. With our minimal intervention model of wine making, the must (or juice) can continue the fermentation naturally within 6-12 hours. After around 3 weeks of fermentation, the wine is refrigerated for a week at -2°C and then filtered and bottled.

Talking point: It is a dry wine, medium to full bodied with a bit of acidity and a lot of fruitiness. Very fresh for a warm sunny day.

Its production has been uninterrupted since the inception of the winery in 1868. It is made from the alcohol of estate grown Obeidi and Cinsault grapes, harvested at optimum ripeness, and blended with fresh anise. Since 2015, Domaine des Tourelles grows its own anise in Deir el Ahmar, a village in the district of Baalbek. Their arak is produced inside a hundred-year-old cellar, processed traditionally using a three-stage distillation in traditional alembics, and aged in clay jars. Arak is not sweetened. The winery was named after the chapel of St. Thomas, found in the heart of the vineyards. Arak Touma is distilled four times using a variety of grapes and quality aniseed. This Lebanese arak, however, belongs to the favorites among the compatriots already. Thus, however, this is also becoming more and more famous! Finally, the Arak Baladi is both strong and elegant. The strong aroma is clearly noticeable in the bouquet as well as in the taste. In this respect, this brandy also has an honest and traditional effect on the drinker. Accordingly, gentle nuances of licorice unfold here again. A really clear and honest arak from Lebanon. And despite its intense and impulsive personality, this arak still seems very approachable. Accordingly, even a little too seductive. Because once you start drinking it, some people might find it hard to stop. Especially if the the arak is drunk chilled and of course with ice cubes in the summer. However, this brandy can be drunk with numerous dishes. Winemaking & maturing Selected from the best vats of red grapes, this wine is obtained by bleeding. After 10 to 14 hours of maceration, fermentation is done at a low temperature (18°C). Once the alcoholic fermentation is completed, the wine is racked-off and sulphured to avoid malolactic fermentation. Once it has stabilised, SUNSET is bottled in the spring, to preserve its ripe fruit flavours. Ageing Better appreciated the first year; it can be kept for up to 2 years in a good cellar. Serving This fresh robust wine, with its slightly spicy aroma, is the ideal accompaniment to Mediterranean or Oriental cuisine. It also complements raw vegetables and cold meat.
