The story of Ching Shih Dark Spiced is rooted in the fascinating history of Ching Shih herself. Ching Shi was a legendary pirate active in the South China Sea in the 19th century. She was known for her exceptional leadership qualities and powerful fleet of hundreds of ships and tens of thousands of pirates. The Pirate Queen’s legacy as one of the most successful has inspired the creation of Ching Shih Dark Spiced, which captures the essence of her strength and power.

The rum is aged in French and American oak and sherry casks. This aging gives the spirit added depth and complexity, allowing the flavors to develop and mature over time.

Gastronomic combinations: a unique combination of rum flavors, including ginger, Sichuan pepper and other herbal components, gives a unique touch to classic cocktail recipes. El Dorado 12-Year Rum is composed of a blend of aged rums, all at least 12 years old. The rums are distilled using a combination of stills including double wooden pot stills and are aged in bourbon oak casks.Demerara Distillers of Guyana produces El Dorado 12-year rum and is the country’s last remaining distillery, with origins tracing back to 1670. The name “”El Dorado”” references the legendary city of gold that is said to be in the country’s Rupununi region.

This is a white rum (with a slight shade of yellow to it) that is aged up to six years, then charcoal filtered to strip the color out. As delicate and delightful a white rum as you’re likely to find, the rum starts off with a heady amount of alcohol, masking sweet notes of coconut and a hint of lemon. The palate is on the sweet side (but not overly so), dosed with coconut, pineapple, and a kick of licorice on the back end. This gives the otherwise fairly straightforward rum a bit of a spicy kick, with just a hint of lime peel lingering on the back end.
