West Cork Bourbon Cask Irish Whiskey – 70 cl

West Cork Distillers was formed in 2003 by childhood friends, John O’Connell, Ger McCarthy and Denis McCarthy at a time when it made very little economic sense to do so. The early years were far from glamorous, operating in a room at the back of Denis’ house in Union Hall with two small stills bought from a schnapps producer in Switzerland.

Currently the distillery operates out of a 12.5 acre site on Marsh Road, with a distillation capacity of 4mln litres of pure alcohol. With distributors across the globe, the award winning West Cork Irish Whiskey is now sold in almost 70 countries. Case sales have risen considerably every year for the past six years and the staff has grown to over 80 people, with the majority based locally in West Cork.

Distillation is carried out in eight pot stills and two column stills which produce almost 4.5 million litres of alcohol. A further three stills are dedicated to gin. Seven warehouses, which are all located on site at the distillery in Skibbereen, store up to 55,000 casks as needed. Five bottling lines operate 24 hours per day, six days per week. Every hour, there are 2,000 bottles processed on site.

A delicate blend of grain (75%) and malt (25%) whiskey matured in bourbon casks.

Tasting Notes

Nose: Vanilla, hay, biscuit crumbs, touch of glue and yellow fruit.

Palate: Poached pear, buffalo grass, a little light caramel.

Finish: Short with some orchard fruit and pepper.

The Macallan Double Cask 15 Years Old is a well-balanced single malt whisky made by combining the ideal harmony of two oak casks into a single superb whisky. Sherry-seasoned American wood adds faint vanilla to the modest spice of European oak, resulting in a whisky with a sweeter, warmer flavour and character.Within one superb single malt whisky, two unique oaks produce the perfect equilibrium of flavours. The Double Cask whiskies are aged in two different content-types of oak, in hand-crafted casks that have been seasoned with dry Oloroso sherry. Vanilla, citrus, and butterscotch flavours are imparted by American oak.

The Macallan's unmistakable delicate spice comes from European oak. These two superb whiskies combine after 15 years to create a distinct single malt with a sweeter, warmer flavour and character.

Tasting Notes: On the nose, butterscotch and plump raisin, with spiced apple crumble and oak spice.

On the palate, dried fruits galore, with a dusting of cinnamon, candied ginger and orange peel. More warming ginger alongside a drizzle of honey and buttery caramel on the finish.

Johnnie Walker 18 Year Old (or "Aged 18 Years") is a terrific blended Scotch whisky from the world-famous range, which features a combination of up to 18 different whiskies, including the likes of Cardhu, Glen Elgin, Auchroisk and Blair Athol, among others. Carefully created by master blender Jim Beveridge, this expression packs bags of creamy vanilla, vibrant fruit and runny honey, alongside soft wisps of smoke.  Back in the days of yore and yonder, this was known as Johnnie Walker Platinum Label.

Nose: Honeyed cereals, Cadbury's Fruit and Nut, distant bonfire smoke, clementine and spring blossom.

Palate: Peanut brittle, candied peels, plump sultana, a whisper of floral malt gives it an aromatic mid-palate, before giving way to a whisper of dry, earthy smoke.

Finish: Another wave of honey, with a soft hint of cinnamon spiciness.
